Ingredients (serves 2) :

 

Quinoa bowl

  • 1-2 eggs
  • 1 ½-2 cups cooked quinoa
  • sliced ​​avocado (according to your preferred portion)
  • 8-12 pieces of tofu puffs (cut into small pieces, blanch with hot water)
  • Miso Mustard Dressing
  • sliced green onions (according to your preferred taste)
  • Salted seaweed (according to your preferred taste)

 

Miso Mustard Dressing

  • 1 tablespoon white miso
  • 1 tablespoon Dijon or whole grains
  • 2 tablespoons oil
  • 2 teaspoons sesame oil
  •  squeeze of lemon (according to your preferred taste)
  • Pepper

Steps:

  • Put the eggs into the boiled water, set a timer for 6 minutes. Prepare another bowl of ice water and set aside.
  • 6 minutes to 6 minutes 30 seconds is the best condition when the yolk is half cooked. Pick up the eggs, put them in ice water immediately, wait a little while, peel it carefully.
  • Whisk the ingredients together, taste and adjust the seasoning, make the miso mustard dressing.

Japanese Inspired Avocado Toast

This dish is inspired by Japanese sushi. It uses exquisite methods to put the ingredients on top. Although it’s simple, it looks super fine!

Ingredients:

  • 1 avocado
  • 10-12 thin slices of toast ( baguette)
  • 1 handful baby arugula
  • 6 slices of salted seaweed
  • 1-2 tablespoons of ikura
  • toasted black and white sesame seeds
  • Salt and pepper (for seasoning)

Steps:

  • Cut the avocado lengthwise, in the middle carefully, rotating around the seed. Twist half of the avocado off and remove.
  • Remove the seeds with a knife or spoon, place down the avocado, cut it into 10-12 slices.
  • Bake your baguette in the oven for 3 minutes (depending on personal taste, it can be baked longer if you want it crunchier)
  • Take out the bread, spread the ingredients on the bread in order to baby arugula, a half slice of salted seaweed, 2-3 slices of avocado, and use a small teaspoon to put the ikura on the avocado
  • Finally, sprinkle with fried black and white sesames, salt, and pepper.

Coconut Cream French Toast

This is for those who want to have something sweet!  Compared to the previous two recipes, French toast seems to be more flavorful, but you can mix with different types of fruits to make it more refreshing!

Ingredients (serves 2):

  • ½ cup unsweetened coconut flakes
  • 1 tablespoon of milk
  • 2 tablespoons evaporated milk
  • 2 tablespoons condensed milk
  • 3 eggs
  • ½ teaspoon vanilla extract
  • A pinch of salt
  • 1 can of full-fat coconut cream, refrigerated overnight (let the water separated with the cream)
  • 2 teaspoons sugar
  • 4 thick slices of French bread or other bread choices
  • butter or oil
  • 1 cup of raspberries (can be replaced with other fruits)

Steps:

  • Pour the coconut flakes into a pan and stirring it over the medium heat. Turn off the heat until it turns golden and toasty. Pick them up and set aside.
  • Flip the coconut can upside down and open. Pour the separated water and reserve for other use.
  • Spoon out the thickened cream into a large chilled bowl, mix it with a hand mixer until fluffy and thick. Add the sugar and whip it until dissolved. Put it in the fridge.
  • Prepare a shallow bowl, whisk together with the milk, evaporated milk, condensed milk, eggs, vanilla extract, and salt to the bowl and stir well.
  • Dip thick slices of toast into the egg mix, flipping it and dip again.
  • Put the frying pan on the stove and turn on the medium or medium-high heat, melt a piece of butter or boil some oil.
  • Add the soaked slices of bread and fry until golden brown and crisp, flipping once.
  • Serve your French toast in a beautiful plate, topped with coconut whipped cream, coconut flakes, and raspberries.
